Flourless Decadent Chocolate Brownies

The first time I tried chocolate black bean brownies I couldn't believe it! It was love at first taste. If you are a chocolate lover, you will love these brownies. The best part is that they are low in calories (only 130 per serving), gluten free, and low on the glycemic index. Suitable for the whole family and especially children with celiac disease or diabetes.

There are several similar recipes for bean brownies, I changed a couple of things: changed the oil to coconut oil, added peanut butter, changed the amount of sugar. Try a couple of recipes, until you find the winner. I hope you like them!

Ingredients
  • 1 can of black beans
  • 3 tablespoons coconut oil
  • 3 eggs
  • 2 tablespoons peanut butter
  • 1 tablespoon vanilla
  • 1/3 cup dark cocoa
  • 2/3 cup sugar (you can substitute the sugar for splenda baking sugar)
  • ¼ teaspoon salt
  • ½ teaspoon ground espresso coffee
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ cup semi-sweet chocolate chips (60% cocoa)
  • ¼ cup walnuts *(optional)
Directions
  1. First, clean the beans very well. Use a food processor to soften the beans well. You can add the oil to facilitate the mixture.
  2. Then add the eggs, vanilla, and peanut butter to create a nice moist base.
  3. Mix well the rest of the dry ingredients separately: cocoa, coffee, sugar, baking powder, baking soda and salt).
  4. Combine the two mixtures and add the chocolate chips last.
  5. Put them in a cupcake pan or 8x8-inch container.
  6. Distribute some peanut butter with a knife in the container in a spiral movement for a visual effect.*Optional- Top with walnuts
  7. Bake them for 25-30 minutes at a temperature of 350. (Put a toothpick in to make sure they are cooked, but you don't want them to overdo it either)
